Rich chicken shoyu ramen
Slow-extracted umami from Hinai jidori, Aomori Shamorock, and Nagoya Cochin, layered only with Rausu kombu and scallop dashi from Hokkaido so the chicken flavor stays clear. Purified filtered water is used.

Shellfish dashi shoyu ramen
A blend of shellfish dashi and chicken soup. Aomori and Tottori shijimi clams are frozen to deepen umami, then paired with organic soy sauce from Hyogo and light soy from Tottori to capture their aroma and savoriness.

Dried-oyster dark shoyu ramen
Plenty of dried oysters steeped in barrel-aged soy sauce from Wakayama. Oyster confit oil is used as aromatic oil, with Cambodian black pepper for accent.
